The “I’m Not Much of a Baker” Christmas Cookie Recipe

I’m really more of a pot roast kind of person. Roasting, grilling, baking, pastas, veggies, meats – much more my style. But here come the holidays and there is that urge to create beautiful Christmas cookies to give to friends and family.
A few years ago I came across this recipe for beautiful, yummy and – amazingly – super easy cookies that can be done in color for Christmas. They’re called Forgotten Cookies!

Forgotten Cookies Ingredients:
2 egg whites (you can use powdered egg whites if you like)
pinch of salt
2/3 cup sugar (superfine if you can but regular works)
1 teaspoon vanilla
1 cup chopped nuts (and/or dried cranberries)
1 cup chocolate chips or bits (or mint, peanut butter –whatever you like!)
food coloring, if wanted
Heat oven to 350
Grease cookie sheet lightly with veg. oil or cover with foil
Beat 2 egg whites until foamy
Add 2/3 cup sugar – beat mixture until stiff
Add pinch of salt, vanilla, nuts and chocolate bits
Separate into different bowls if you want and add a drop or two of different food colors – we have done light green and pink cookies for Christmas – blue works too – not too much – prettier as pastels!
Drop batter by teaspoonful – they don’t spread much so can be close together
Put in oven – Now HERE is the kicker!! TURN OFF the oven when the cookies go in!
Leave cookies in oven overnight – this is why they’re called “Forgotten Cookies!”

Makes 30-36 cookies
