There is Still Time to Visit our Farmers' Market!

Friday, November 2, 2012

Here we are in November!  The weather folks say it will be cool and sunny on Saturday - nice to have the sun around again after so many clouds with Hurricane Sandy.  We hope everyone weathered the storm well, and we keep all those who suffered loss of life and property in our thoughts.

You can still find a bountiful harvest of fall vegetables here at the market:

Apples, sweet potatoes, gourds, greens, pumpkins, mums, winter squash, turnips are here!

If you are looking for more greens recipes - see below...

Recipes of the week:

2 tablespoons olive oil
3 to 4 cloves minced or very thinly sliced garlic
1 1/2 cup hot chicken stock or water
Salt and pepper to taste
3 large bunches kale, collards or turnip greens, washed, trimmed and cut chiffonade

In a very large soup pot, warmed over medium high heat, add olive oil.
Heat momentarily, then add garlic and cook over moderately high heat, stirring, just until fragrant. Do not burn or the garlic will be bitter.

Add washed greens, stalks removed, chopped chiffonade in large handfuls, stirring constantly and letting the greens wilt slightly before adding more.

Add hot chicken stock or water. You aren’t boiling the greens, you are braising, so you only need enough to cover the greens. Season with salt and pepper, cover and cook over low heat until tender.

Serve with a nice hot, crusty, baguette or over couscous.

2 tablespoon olive oil
1 small sweet onion, chopped
2 links chicken or pork andouille or Spanish chorizo* sausage, cut into thick slices
1 small green zucchini, quartered and cut into 1/2-inch rounds
1 small yellow squash, quartered and cut into 1/2-inch rounds
2 large garlic cloves, minced
A large bunch washed, trimmed and roughly chopped lucinato kale
1/2 cup chicken stock, hot
2 (16-ounce) cans cannellini beans or other white beans, rinsed and drained 1 can diced tomatoes, undrained Trader Joe’s African Spice Salt and pepper to taste

Heat oil in a large skillet over medium-high heat. Saute onion and sausage until onions are soft and sausage is browned. Add zucchini, squash and garlic; cook 2 minutes. Add kale and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until thoroughly heated. Season to taste with a few turns of the African Spice, salt and pepper. Serve immediately.

*Spanish chorizo is already cooked. Mexican chorizo, which is raw, should not be substituted
