Great Food (and Recipes!) From Our Farmers' Market!

With August upon us, summer may seem to be ebbing but the Farmers' Market is at its peak, with several more months of Maryland-grown products being readied for market. From watermelon to heirloom tomatoes; squash to onions; beets to fiery peppers, our Market brings local producers together and for many of them, August is the height of the season.

Despite the hot sun, we can promise a “cool” experience, not only because of our beautiful lakefront location but also because of our "Cool Customer Tent" - a shady spot to sit for a while and enjoy the Market. The tent is across from the Finch Family Farm stand. And be sure to stop by and check out our beautiful Market shopping bags - available from Leah at The Red Poppy!

Recipes of the Week:

(Both found in Lancaster Farming - sources indicated)

Zucchini Bake

3 cups zucchini, sliced

2 cups tomatoes cut in chunks

1 cup onions, sliced

1 teaspoon salt

1-1/2 teaspoon Italian seasoning

Dash cayenne pepper

Arrange zucchini, tomato, and onion in a lightly greased casserole dish. Sprinkle seasoning over the mixture. Bake at 350 F for 30 to 45 minutes, depending on how well-cooked you want the vegetables. Makes 6 servings.

Squash Casserole

2 cups yellow squash

2 cups zucchini

3 medium onions

Chop by hand or in food processor. Can just use yellow squash if you prefer. Mix with:

1 cup Bisquick

3 eggs

1/2 cup vegetable oil

2 cups shredded cheese

Salt and pepper to taste

Put in casserole dish and bake at 350 F for 45 minutes or until brown on top.

The Market Schedule is:

Saturdays - May 5 through late fall - 9:00 a.m. to 1:00 p.m.

Wednesdays - starting May 9 - 11:00 a.m. to 3:00 p.m.
